  • 3 Tbsp olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, crushed
  • 6 anchovy fillets, drained
  • 1 x 410 g can chopped tomatoes
  • 1 x 170 g can tuna chunks in oil, flaked
  • freshly milled black pepper
  • a handful of chopped flat-leaf parsley
  • ½ tsp sugar
  • 1/2 x 500 g pkt spaghetti or pasta of your choice
  • 1/4 C    grated Pecorino cheese for serving

Heat the oil in a large frying pan. Gently fry the onion until soft and fragrant. Add the garlic and anchovies and continue frying until soft and flaky. Add the tomatoes and sugar and bring to the boil, reduce the heat and simmer gently for 10 minutes. Stir in the tuna and heat through briefly. Season with lots of black pepper and add the parsley.

While the sauce is simmering, cook the spaghetti in boiling salted water until al dente. Drain well. Add to the tuna sauce and toss well until evenly combined.

Serve with Pecorino cheese.
