Toasted Green Tomato and Chilli Sandwiches
A simple combo that makes for a tasty gourmet sandwich.

6 slices soft white bread, crusts removed
3 green tomatoes
flour, for dusting
salt and pepper, for seasoning
oil, for frying
1 tsp (5 ml) chilli flakes
Flatten the bread with a rolling pin and brush with some olive oil. Lightly toast the bread in a pan over moderate heat. Keep to one side.
Cut the tomatoes into thick slices, dip them into flour and season to taste. Fry until lightly caramelised but still firm and holding shape.
Lightly spread the fried bread slices with the mustard. Cut the fried tomato slices in half and cut the bread to match the size of the tomatoes. Sprinkle with chilli flakes, then layer into small sandwiches.
