The Perfect Potato Rosti

6-8 potatoes, unpeeled
salt and freshly ground black pepper
handful fresh parsley, roughly chopped

goose fat for frying

Place the potatoes into a saucepan, cover with cold water and bring to the boil.

Boil the potatoes for about 10-15 minutes or until the potatoes are almost cooked through. Drain and leave to cool for a few minutes. When the potatoes are cool enough to handle, peel and grate into a large bowl.

Season the grated potato with salt and freshly ground pepper and add the parsley.

Heat a little goose fat in a pan and when hot, fry handfuls of grated potato, roughly shaping it into a round disk. Fry for about 4-5 minutes on each side or until golden brown and crispy.

Serve immediately with grilled bratwurst and mustard.
