Thai Fish Bake

All the flavours of Thai cooking in one fish bake

  • 500 g filleted hake, cut into portions
  • ½ C (125 ml) seasoned flour
  • cooking oil, for shallow-frying
  • fresh coriander, for garnishing

Sauce

  • 1 x 400 ml can coconut milk
  • 2 tsp (10 ml) garlic and ginger paste
  • ½ C (125 ml) chopped fresh coriander
  • 4 spring onions, thinly sliced
  • 2 stalks lemon grass, chopped
  • 1 red chilli, seeded and chopped
  • 1 green chilli, seeded and chopped
  • 1 tsp (5 ml) cornflour mixed with 1 Tbsp (15 ml) fish sauce

Preheat the oven to 200 °C.

Coat the fish with the seasoned flour and fry until gently browned on both sides (do not cook through). Place the fish in an ovenproof dish and keep to one side while preparing the sauce.

Mix all the sauce ingredients together and pour over the fish. Bake uncovered for 20 minutes.

Garnish with fresh coriander and serve with jasmine rice and fine green beans.
