Tacos with Chilli Salsa and Guacamole

4/5 C (200 ml) Bolognese sauce (see Traditional Spaghetti Bolognese recipe)
1 tomato, finely chopped
1 small chilli, seeded and finely chopped
small handful of coriander, finely chopped
salt and freshly milled pepper to season
1 avocado, peeled and pitted
juice of 1 lemon
salt and pepper to season
Tabasco sauce to taste
1–2 taco shells
grated Cheddar cheese, for sprinkling
Place the Bolognese sauce into a saucepan and gently heat.
Place all the salsa ingredients into a small bowl and mix to combine. Season with salt and pepper.
Using a fork, mash the avocado until smooth. Add the onion, a squeeze of lemon juice, salt and pepper and a dash of Tabasco sauce. Check seasoning and adjust accordingly.
Spoon the heated mince Bolognese sauce into the taco shells and top with salsa, guacamole and grated cheese.
