
T-Bone with Green Peri-Peri Sauce
Treat your taste buds to this flavour bomb – T-bone steak, charred to perfection on the Chad-O-Chef Qube Braai, drizzled with a delectable green peri-peri sauce.

Ingredients
Green Peri Peri Sauce
⅓ C (80 ml) olive oil
1 small onion, chopped
8 garlic cloves, chopped
15 small green chillies
⅓ C (80 ml) white vinegar
½ tsp (2.5 ml) chilli powder
zest and juice of 1 lemon
1 tsp (5 ml) salt
20 g fresh mint, leaves picked
Steak
1.2 kg T-bone steak
1 tsp (5 ml) salt
1 tsp (5 ml) pepper
Method
Green Peri Peri Sauce
Heat 1 tablespoon of the oil in a frying pan over medium heat. Add the green pepper, onion and garlic, and sauté until soft, approximately 5 minutes. Remove from heat and set aside to cool.
In a blender, combine the green chillies, remaining olive oil, vinegar, chilli powder, lemon zest and juice, salt, and mint. Add the sautéed pepper, onion and garlic mix to the blender. Blend until the mixture reaches a sauce-like consistency. Transfer the peri-peri sauce to a clean container.
Steak
Build a medium-hot heat fire in the Chad-O-Chef Qube Braai.
Drizzle the steak with olive oil and then season with salt and pepper.
Grill on the Qube Braai, turning occasionally, to build a nice char. It should reach medium-rare (55 ºC on a meat thermometer). Remove from the heat and allow to rest for 10 minutes before slicing and serving. Drizzle with the green peri peri sauce and enjoy!
