Stir Fried Veg & Feta Frittata with Sesame Toast
Eggs and veggies are always a great combination for putting together an effortless meal.

Ingredients
Frittata
2 tsp (10 ml) sesame oil
1 bag (500 g) Findus Wok Bali
2 tsp (10 ml) garlic, crushed
2 tsp (10 ml) black bean sauce
8 eggs
½ C (125 ml / 100 g) mascarpone
½ tsp (2.5 ml) salt
2⁄3 C (160 ml / 100 g) feta, diced
Sesame Toast
2 Tbsp (30 ml) olive oil
1 large baguette, sliced into 12 slices
2 tsp (10 ml) sesame seeds
handful of watercress, to serve
Method
Frittata
Preheat the oven to 180 °C.
Heat a wok until hot and add the sesame oil.
Add the Findus Wok Bali and garlic and fry for 4 minutes. Add the black bean sauce and fry for another minute.
Combine the eggs, mascarpone and salt and blend with a hand blender until smooth.
Pour the egg mixture into a lightly greased baking dish and scatter the fried stir-fried vegetables and feta over the top.
Place in the oven and bake for 30-40 minutes until the top is golden and the egg has set.
Garnish with watercress.
Sesame Toast
Place the baguette slices onto a baking tray.
Drizzle oil over the slices and scatter the sesame seeds on top.
Bake in the oven for 6-8 minutes until crisp and golden.
Tip: To add some protein to the dish, add a can of tuna to the vegetables when frying.
