4 large pork chops

Marinade

¼ C (60 ml) honey

1/3 C (80 ml) Soy sauce

2 fat garlic cloves, crushed

2 Tbsp (30 ml) ginger, grated

2 Tbsp (30 ml) sesame seeds

To Serve

extra sesame seeds for garnish

4 spring onions, thinly sliced on the diagonal

Trim the tough rind off the strip of fat on each pork chop – don’t remove the fat, make a few slashes in it so that it lies flat when cooking.

Place the chops in a medium-shallow ovenproof dish.

Mix the marinade ingredients together and pour over the chops, cover and allow to marinate for 30 minutes (if you marinate longer than 30 minutes, chill in the fridge).

Preheat the oven to 220 °C.

Bake the chops for 10 minutes, turn once and bake for another 10 minutes.

The chops should be golden, sticky and cooked through.

Serve garnished with sesame seeds and spring onions. Enjoy with an Asian green salad or slaw, wilted spinach or sautéed pak choy.

Tip: Add chopped chilli to the marinade, if you require a bit of ‘heat’.
