Bulgur Wheat Salad
A beautiful, flavourful salad perfect for a side dish!

Cover the bulgur with the boiling water and soak for 30 minutes, to soften. Drain in a sieve and squeeze out the excess water. Place it in a mixing bowl with the rest of the ingredients and toss to combine. Refrigerate for 2–4 hours before serving, to allow the flavours to develop.
Toss again just before serving. Enjoy as an appetiser or as an accompaniment to any meat, fish or poultry dish.
