Bulgur Wheat Salad

  • 1 C (250 ml) bulgur (cracked wheat)
  • 2 C (500 ml) boiling water
  • 1 C (250 ml) (40 g) finely chopped fresh flat-leaf parsley
  • ⅓ C (80 ml) finely chopped fresh mint
  • ½ small red onion or 6 spring onions, finely chopped
  • 2 cloves garlic, crushed
  • 4 firm red tomatoes, seeded and cut into small cubes
  • ½ English cucumber, cut into small cubes
  • juice of 2 lemons
  • ½ C (125 ml) good-quality olive oil
  • 2 tsp (10 ml) salt
  • ¼ tsp (1.25 ml) milled black pepper
  • ¼ tsp (1.25 ml) allspice
  • ¼ tsp (1.25 ml) ground cinnamon

Cover the bulgur with the boiling water and soak for 30 minutes, to soften. Drain in a sieve and squeeze out the excess water. Place it in a mixing bowl with the rest of the ingredients and toss to combine. Refrigerate for 2–4 hours before serving, to allow the flavours to develop.

Toss again just before serving. Enjoy as an appetiser or as an accompaniment to any meat, fish or poultry dish.
