
Steamed Honey, Almond & Fig Pudding
These steamed puds are a perfect winter dessert. Warm, gooey and with delicious flavours of fig and almond.

Ingredients
6 Tbsp (90 ml) honey
125 g butter, softened
125 g sugar
2 eggs
½ tsp (2.5 ml) vanilla essence
65 g flour
1 tsp (5 ml) baking powder
1 tsp (5 ml) ground cinnamon
4 cardamom pods, crushed and seeds removed
100 g ground almonds
2 Tbsp (30 ml) milk
4 figs (fresh or preserved), roughly chopped
Method
Lightly grease six individual ramekins or moulds.
Pour 1 Tbsp (15 ml) honey into each ramekin.
Cream the butter and sugar together until pale in colour. Add the eggs, one at a time, and beat until well incorporated and the mixture is light and fluffy. Stir in the vanilla essence.
Sift the flour, baking powder and cinnamon together, then add the cardamom seeds and ground almonds. Fold the dry ingredients into the creamed butter mixture and add the milk and chopped figs.
Pour the batter into the ramekins, about three-quarters full, and cover with foil. Place the ramekins into a large saucepan and pour enough water into the saucepan to come halfway up the sides of the ramekins. Close the saucepan with a lid and steam for 30–45 minutes, checking the water level throughout steaming and topping up, if necessary.
Turn out the puddings onto individual plates and serve warm with whipped cream or vanilla ice cream.
