A good piece of steak needs very little… but this creamy paprika sauce and crisp salsa just takes it to the next level.

Salsa
1 ½ C (375 ml) cucumber, diced
½ red onion, finely chopped
2 avocadoes, diced
2 tsp (10 ml) red wine vinegar
1 tsp (5 ml) olive oil
5-6 basil leaves, torn

Sauce
225 g (1 ½ tubs) Fairview Full Fat Yoghurt
1 ½ tsp (7.5 ml) lemon zest
¾ tsp (3.75 ml) smoked paprika
pinch of cayenne pepper
pinch of salt
squeeze of lemon juice

Steak
4 thick-cut sirloin steaks
olive oil , for brushing
micro herbs, to serve

Salsa
Stir all of the ingredients together and season with salt and pepper.

Stir all the ingredients together and season with salt and pepper.

Steak
Heat a griddle pan until smoking hot or build a medium-hot heat braai fire. Brush the steaks with olive oil and fry for 2-3 minutes on each side for medium-rare if grilling, or sear over the braai until well caramelised. Season with salt and pepper. (Fry/braai for longer, if you prefer your steak to be well-done).

Serve each steak with a dollop of the sauce and top with the fresh salsa.

Tip: To make different flavoured sauces, add any of the following to the yoghurt pesto, whole grain mustard, chopped herbs, sundried tomatoes or chopped capers.
