Ingredients
a knob of butter
2 spring onions, chopped
3 courgettes (baby marrows), grated
500 g fresh spinach
2 sprigs of mint, finely chopped
Sea salt and freshly ground black pepper
4 eggs
dragon fruit for serving (optional)
Method
In a large saucepan over moderate heat, heat the butter and olive oil together. Sauté the spring onions and courgettes until caramelized. Add the spinach and stir until just wilted.
Drain in a colander and allow to cool to room temperature. Add the mint and seasoning.
Preheat the oven to 180 °C. Grease a shallow baking pan.
Loosely form 4 nests with the spinach. Pop into the baking pan and place in the oven for 5 minutes until the nests are heated through. Break an egg into each nest, return to the oven and bake until the eggs have set.
Serve with fresh dragon fruit.
