Spicy Tomato & Garlic Prawns

2 Tbsp (30 ml) butter
1 Tbsp (15 ml) crushed garlic
2⁄3 C (160 ml) PEPPADEW® Piquanté Peppers, finely chopped
1 tin (400 g) whole tomatoes
2 C (300 g) baby tomatoes
1 tsp (5 ml) Soy sauce
1 C (250 ml) cream
20 x (400 g) fresh prawns, butterflied
fresh basil, to serve
Heat the butter and spring onions in a large frying pan.
Fry gently for 5 minutes until the onions start to soften.
Stir in the garlic and PEPPADEW® Piquanté Peppers and fry for another 2 – 3 minutes. Add in the tinned tomatoes, baby tomatoes and Soy sauce.
Turn up the heat and let it bubble away for 10 minutes.
Add in the cream and prawns and cover with a lid.
Cook for 4 – 5 minutes until the prawns are tender and cooked through. Season to taste and scatter with fresh basil to serve.
TIP: Add more cream if you find it too spicy. If it is not spicy enough, simply add more chopped fresh PEPPADEW® Piquanté Peppers before serving.
