Spicy Salmon Squares with Shaved Radish
A bite of delicate salmon with a kick of chilli – yum!

30 g sesame seeds
1 tsp (5 ml) dried chilli flakes
200 g Norwegian salmon fillets
2 Tbsp (30 ml) sesame oil
2 radishes, shaved
pea shoots, to garnish
Mix the sesame seeds and chilli flakes together.
Cut the salmon into 2 x 2 cm pieces and then press the salmon fillets into the sesame seed mixture to coat.
Heat half of the oil (1 Tbsp, 15 ml) in a non-stick frying pan and sear the salmon pieces for 15 seconds on each side.
Remove from the pan, skewer each piece with a slice of fresh radish.
Serve the salmon squares hot, garnished with fresh pea shoots.
