Spicy BLT Guacamole with Tortilla Chips


Spicy guacamole is mixed with the much-loved flavours of a classic BLT sandwich by adding some bacon, tomatoes and crisp lettuce. Perfect for scooping up with plenty of tortilla chips!

BLT Guacamole

200 g shoulder bacon, cooked
2 x 200 g tubs Westfalia Spicy Guacamole
½ C (125 ml / 20 g) cos lettuce, finely chopped
½ C (125 ml / 90 g) cocktail tomatoes, quartered
¼ (60 g) red onion, finely chopped
salt and pepper

Tortilla Chips

10 (250 g) corn tortillas
oil, for deep frying

To Serve

½ C (125 ml) sour cream
1 Tbsp (15 ml) chives, finely chopped
a few springs of parsley as garnish (optional)

BLT Guacamole

Chop the cooked bacon and combine with the Westfalia Spicy Guacamole and the rest of the ingredients. Season to taste. Cover and refrigerate until ready to serve.

Tortilla Chips

Cut each corn tortilla into 6 wedges. Heat the oil for deep-frying to 180 °C. Fry the tortilla wedges, in batches for 1-2 minutes until golden and crisp. Drain on kitchen paper and season lightly.

To Serve

Ripple half of the chives through the sour cream and sprinkle the remaining chives and the sprigs of parsley over the BLT guacamole as garnish. Serve the sour cream and guacamole alongside the tortilla chips for dipping.

TIP: The fried tortilla chips can easily be replaced with 250 g store-bought tortilla chips. We recommend Santa Annas.
