Spaghetti with Garlic and Lemon Prawns and Courgettes


A seafood spin on spaghetti. Yum!

250 g spaghetti, cooked, drained and drizzled with extra virgin olive oil

2 T (30 ml) olive oil

50 g butter

2 cloves garlic, crushed

1 punnet of courgettes, thinly sliced lengthways with a slicer or veggie peeler

250 g frozen prawn tails, thawed, peeled and cleaned

Zest and juice of 1 large lemon

Salt and pepper to taste

Heat half of the oil and butter in a large frying pan and sauté the courgettes until slightly golden. Add half of the garlic and heat though for 5 seconds. Remove and set aside.

Heat the remaining oil and butter and sauté the prawns until pink and cooked through.  Add the remaining garlic and set aside.

In a large bowl, toss spaghetti, the buttery courgettes and prawns, the lemon zest and juice and lots of salt and black pepper together until well combined.

Serve immediately.
