Spaghetti served with traditional red sauce
A delicious traditional spaghetti, vegetarian style!

1 Melt the butter and oil in a pot and sauté the garlic for a few seconds. Add the tomatoes, water, season well and basil leaves and cover. Cook stirring occasionally for about 1 hour. Add more water only if the sauce is getting very dry.
2 Pour the sauce into a food processor and process until smooth. Pour back into the pot and keep warm. At this stage you can add a little fresh cream if you like.
3 In plenty of salted boiling water cook the pasta until al dente and drain.
4 Pour the pasta into a serving dish and toss through the sauce. Serve with plenty of Parmesan and fresh chilli if desired.
