1 Tbsp (15 ml) oil
1 Tbsp (15 ml) butter
1 Tbsp (15 ml) mustard seeds
½ C (125 ml) peanuts
½ C (125 ml) cashew nuts
2 green chillies, sliced
20 fresh curry leaves
1 tsp (5 ml) crushed garlic
1 tsp (5 ml) crushed ginger
1 tsp (5 ml) turmeric
zest and juice of 1 LemonGold®
500 g cooked basmati rice
sea salt and freshly ground pepper

Melt the butter and oil in a large frying pan over medium heat. Add the mustard seeds and nuts and fry until the nuts are toasted. Add the sliced green chillies, curry leaves, garlic and ginger and fry for 2 minutes until fragrant.

Add the rice to the pan and then sprinkle in the turmeric. Add the LemonGold® zest and juice and mix well to combine. Stir and heat through until everything is combined.

Season and serve immediately with fresh slices of LemonGold®.
