Soft-boiled Eggs with Parmesan & Pesto Soldiers

2 Tbsp (30 ml) basil pesto
4 Tbsp (60 ml) grated Parmesan cheese
Vegetable oil, for frying
Bring a small saucepan of water to the boil. Carefully add all 4 eggs to the boiling water and cook for no more than 3 minutes for soft-boiled eggs.
In the meantime, prepare the soldiers. Spread the pesto evenly onto 4 slices of bread, topping each with grated Parmesan and finally with another slice of bread.
Heat a little oil in a small pan and gently fry the sandwiches for about 1 minute on each side, or until toasted and golden brown.
Slice the toasted sandwiches into finger-length soldiers and serve immediately with the soft-boiled eggs.
