Chilli Bacon Caramelised Nuts

200 g streaky bacon
1 C (250 ml) brown sugar
¼ C (60 ml) water
1 tsp (5 ml) smoked paprika
½ tsp (2,5 ml) cinnamon
½ tsp (2,5 ml) chilli flakes
250 g roasted and salted nuts

Shooter 

1 shot bourbon per person
2-3 drops of Tabasco® per shot

Chilli Bacon Caramelised Nuts

Preheat the oven to 200 °C.

Line a baking tray with baking paper and lay the bacon on the tray. Bake in the oven for 15-20 minutes or until crispy. Drain the bacon on paper towel and when it is cool, chop it into a fine crumb.

Line a baking tray with baking paper. Add the sugar, water, paprika, cinnamon and chilli flakes to a medium size pot and mix to combine. Set the pot over medium heat and let it come to a boil without stirring. When the sugar has melted and the mixture is boiling and you see big bubbles forming in the middle, add the nuts and stir to combine. Continue cooking until the mixture has darkened and thickened slightly.

Carefully pour mixture out onto your baking tray and use spatula to flatten the mixture out. Sprinkle the bacon evenly over the mixture and allow it to cool. Chop or break the cooled nuts apart.

Shooter

Pour the bourbon into the Stanley™ shooter glasses and add 2-3 drops of Tabasco® to each one. Shoot and enjoy!
