Smoked Salmon and Cucumber Spaghetti

A tasty seafood style spaghetti, for something a little different!

  • 250 g wholewheat spaghetti
  • 150 g smoked salmon, cut into strips
  • 1/2 cucumber, julienned or shaved into ribbons
  • 6 salad onions (tiny spring onions), sliced
  • a few sprigs of dill, torn
  • juice and zest of 1 large lemon
  • 3 Tbsp (45 ml) extra virgin olive oil
  • salt and milled black pepper to taste
  • 1 C (250 ml) sour cream or smooth low-fat cottage cheese

Boil the pasta in salted water until al dente and drain. In a large mixing bowl, gently combine the spaghetti with the remaining ingredients, except the sour cream. Place in serving bowls. Use a dessert spoon to place a dollop of sour cream or cottage cheese onto each portion. Eat warm or at room temperature.
