
Slow-roasted Tomatoes, Shallots and Whole Garlic
This delicious dish can be served as a side dish or with fresh, artisan bread.

Ingredients
500 g vine or Rosa tomatoes
500 g shallots
4 bulbs garlic, halved
olive oil
salt and freshly milled pepper to taste
Method
Preheat the oven to 120 °C.
Place the tomatoes, shallots and garlic on a baking tray and generously drizzle with olive oil. Add salt and pepper. Place into the oven and slow-roast for 1Â hour or until the garlic is soft and creamy.
Transfer the tomatoes, shallots and garlic onto a platter and serve as a side dish or with fresh artisan bread.
