Simple Chicken Curry with Homemade Wraps
Make you own homemade wraps with this simple and easy chicken curry recipe.

Ingredients
Chicken Curry
1 onion, finely chopped
2 cloves of garlic, crushed
1 small piece ginger, finely grated
2 Tbsp (30 ml) curry powder
500g tomato purée/tinned chopped tomatoes
¼ C (60ml) water
4 chicken breasts, sliced into thin strips
Salt and freshly ground pepper
Squeeze of lemon juice
3 Tbsp (45 ml) Greek/ Bulgarian yoghurt
Handful of fresh coriander, roughly chopped
Wraps:
Good grinding of salt
½ tsp (2.5 ml) baking powder
30 g butter
¼ C (60 ml) boiling water
Cucumber Raita:
1½ C (375 ml) Greek/ Bulgarian yoghurt
Salt and pepper
Squeeze of lemon juice
Method
Heat oil in a small pot and gently fry onion, garlic and ginger over a medium heat or until onions are soft and translucent.
Add the curry powder and continue to sauté for a further 3-4 minutes or until fragrant.
Add the tomato purée or chopped tomatoes and the water and allow to simmer gently for 30 minutes.
Wraps:
Place the flour, salt and baking powder into a bowl and mix until well incorporated.
Melt butter in the boiling water and pour over the flour mixture.
Mix until the dough just comes together, then tip out onto a lightly floured surface and knead until the dough is smooth and no longer sticky (about 3-4 minutes). Divide the dough into 4 equal portions. Lightly flour a clean surface and roll each round out as thinly as possible.
Heat a grill pan until hot and cook the wraps for about 15-30 seconds on each side or until golden brown. Remove from pan and keep warm.
