Rustic Crumbed Chicken Burger Stuffed with Cranberry and Brie

  • good-quality sesame burger buns
  • olive oil for drizzling

Burgers

  • 4 large chicken breast fillets
  • salt and pepper to taste
  • 1 wedge brie, thinly sliced
  • 50 g dried cranberries, finely chopped
  • flour, for dusting
  • 1 egg, beaten
  • 150 g coarse breadcrumbs

Toppings

  • 40 g fresh wild rocket
  • 2 tomatoes, thinly sliced
  • 1 red onion, thinly sliced
  • 1 packet (250 g) streaky bacon, grilled (optional)

Slice the chicken breasts in half lengthways, being careful not to cut right through. Season to taste. Divide the cheese and cranberries into 4 equal portions and place in each cavity. Enclose the filling in the chicken breast, dust with flour, dip into the egg and cover thoroughly with breadcrumbs. Pan-fry for 5–6 minutes per side in a medium-hot pan until the crumbs are golden brown.

Slice open the buns and toast. Drizzle with olive oil and place a breast onto each bun. Top with a good handful of rocket, slices of tomato and onion, and some bacon, if using.
