Roasted Pears with Blue Cheese and Walnuts

These flavours are a classic combo for a reason – pears are the perfect sweet complement to a creamy blue cheese. This dish is sophisticated and yet really easy to make.

4 pears
80 g Cremelat blue cheese (or any other creamy blue)
50 g dried sultanas
60 g walnut halves, toasted and chopped
¼ C (60 ml) honey
3 Tbsp (45 ml) fresh lemon juice
4 sprigs thyme picked
crushed black pepper
45 ml (30 ml) olive oil

To Serve
fresh rocket, dressed in a little olive oil and seasoning
extra toasted walnuts for garnish
Maldon salt

Preheat the oven to 180 ºC.

Peel the pears and slice them lengthwise into halves. Remove the core and seeds from each one. Trim the underside of each half slightly so that the pears will sit flat and balanced on a baking tray.

Crumble the cheese and combine with the walnuts and sultanas and set aside.

Combine the honey, lemon, thyme, pepper and olive oil and then toss the halved pears in this dressing until evenly coated.

Arrange the dressed pears on a baking tray, reserve the leftover dressing for basting. Bake the pears for ± 10-15 minutes (depending on how much bite you want), then remove from the oven and brush again with remaining dressing.

Drop the oven temperature to 165 ºC.

Fill each cavity of the pear halves with the blue cheese and nut filling, drizzle remaining with the remaining dressing and bake for a further 6-8 minutes.

Allow to cool slightly and then serve with dressed rocket leaves, extra toasted walnuts and a sprinkle of Maldon salt.

As an alternative, you could also poach the pears in a mulled wine before filling and baking.
