
Roast Leg of Lamb with Prickly Pear Basting

Ingredients
Lamb
1 leg of lamb
Prickly Pear Basting Sauce
1 C (250 ml) prickly pear syrup
10 mint leaves, chopped
Method
Preheat the oven to 160 °C.
Season the lamb well with salt and pepper. Place in a roasting pan with ¼ C (60 ml) water, adding a splash of water every hour.
Roast uncovered for an hour, then cover with foil and roast for another 3 hours, or until the meat disintegrates when gently pushed.
Basting sauce
Combine the syrup, vinegar and chopped mint leaves in a saucepan set over moderate heat. Cook until reduced and thick.
Discard the foil and brush the lamb with the basting sauce. Roast until black and slightly charred. Spoon the pan juices over the lamb and serve with any remaining basting sauce and vegetables of your choice.
