Rabbit Warren Cocktail

50 ml fresh carrot juice
25 ml cinnamon syrup (Monin)
5 very thin slices of fresh carrot (use a veggie peeler)
whole cinnamon sticks (optional)
a whisky tumbler
Use a juicer to juice enough carrots to yield 50 ml of fresh carrot juice. Alternatively, whizz the carrots using a blender, and then use a fine sieve to strain off the juice.
Add the carrot juice to a cocktail shaker and add the vodka and cinnamon syrup. Fill the shaker with ice cubes and shake until the juice until cold. Pour into the tumbler, top up with ice cubes, add the thin carrot strips and lime peel (and cinnamon stick if using) as garnish and finish with a straw. Serve immediately.
Bartenders Note: To create really thin carrot strips, use a vegetable peeler to peel thing slices, then use a sharp knife to slice the pieces into thin strips.
