
Quinoa Salad with Mint & Lime
Simple, healthy and oh so delish!

Ingredients
180 g quinoa
2 C (500 ml) water
¼ C (60 ml) olive oil
juice of 2 limes
zest of 1 lime
2 tsp (10 ml) ground cumin
salt and black pepper to taste
½ punnet cherry tomatoes, halved
1 x 400 g can black beans or red kidney beans, drained and rinsed
1 bunch spring onions, chopped
1 handful fresh mint, finely chopped
Method
Add the quinoa and water to a saucepan and bring to the boil. Reduce the heat to medium-low, cover, and simmer for 10–15 minutes, or until the quinoa is tender and all the water has been absorbed. Keep to one side to cool.
To make the dressing, whisk together the olive oil, lime juice and zest, cumin, and season to taste.
Combine the quinoa, tomatoes, black beans and spring onions in a bowl. Pour the dressing over and toss to coat. Stir in the mint and adjust seasoning to taste. Serve immediately or chill in the refrigerator until ready to serve.
Serve with baked chorizo or grilled sardines.
