Proper Bacon & Cheese Toasted Sandwiches
Everybody loves toasted sandwiches, and this one is always a winner!

1 packet (250 g) streaky bacon
4 large slices artisanal bread
2 Tbsp (30 ml) raspberry jam
1 round Mozzarella cheese, sliced
Preheat the oven to 160 °C.
Layer the bacon on a greased wire rack and place onto a baking tray. Cook until crispy. Remove from the oven but leave the bacon to cool on the rack so that it retains the wavy shape.
Assemble the sandwiches by spreading with the jam and then layering with lots of cheese and bacon. Grill in a lightly greased griddle pan to form grill lines, then pop into the oven until the cheese has melted to perfection.
