Pork Sausages on Cannellini Beans and Watercress
A simply delectable way to serve pork sausages!

4–8 pork bangers/sausages
1 Tbsp (15 ml) olive oil
1 onion, sliced
1 x 400 g tin cannellini beans, drained and rinsed
1 C (250 ml) fresh watercress
sea salt and freshly ground black pepper
1 lemon, cut into wedges
Pop the pork sausages under a preheated grill for 10–12 minutes, turning them a few times.
Meanwhile, heat the oil in a medium saucepan and sauté the onion until glossy and golden brown. Add the beans and heat through for a bit, then add the watercress and allow it to wilt. Remove the saucepan from the heat and season to taste with sea salt and freshly ground black pepper.
Serve the bangers on a bed of the cannellini bean mixture, with a wedge of lemon.
