Plant Based Almost-a-Curry Burger

A burger with a twist! Denny Plant Based Patties are wrapped in soft, homemade flatbreads with an aromatic curry-infused mayo and all the trimmings.

Curry Mayo

1 C (250 ml) vegan mayo
2 Tbsp (30 ml) medium curry powder
a squeeze of lemon juice
salt and pepper

Tomato Sambal

1 medium onion, chopped
1 large tomato, chopped
1 Tbsp (15 ml) chopped coriander
salt and pepper

Raita

1 C (250 ml) vegan yoghurt
½ C (125 ml) finely chopped cucumber
2 Tbsp (30 ml) chopped mint
zest and juice of 1 small lemon
salt and pepper

Flatbreads

150 g cake flour
½ Tbsp (7,5 ml) baking powder
½ tsp (2,5 ml) salt
¼ tsp (1,25 ml) garlic powder
zest of a small lemon
125 g vegan yoghurt
1-2 Tbsp (15-30 ml) water (if necessary)
½ C (125 ml) olive oil for brushing

Plant Based Patties

olive oil
1 x 360 g box Denny Plant Based Patties

To Serve

small bunch fresh coriander, washed
1 small cucumber, peeled into ribbons
1 carrot, peeled and grated

Curry Mayo

Mix the ingredients for the mayo together in a small bowl then set aside.

Tomato Sambal

Mix the ingredients for the tomato sambal together in a small bowl, season to taste and then set aside.

Raita

Mix all of the ingredients for the raita together, check and adjust seasoning and set aside.

Flatbreads

Whisk the flour, baking powder, salt, garlic powder and lemon zest in a mixing bowl. Add the vegan yoghurt and mix until the dough comes together. If the dough is a little dry then add 1-2 tablespoons of water. Turn it out on a work surface and knead it briefly until there is no dry flour. Cover and let the dough rest for at least 10 minutes.

Divide the dough into 4 equal size pieces. Dust a work surface and rolling pin to prevent sticking, then roll the balls out into roughly a side plate size. Set a large frying pan over high heat. Cook the flatbread in a dry frying pan for 1½ minutes, then flip and brush with oil on the upturned side and cook for another 1½ minutes. Place the cooked flatbreads into a pot/dish with a lid to keep warm and pliable while you cook the rest.

Plant Based Patties

Set a large frying pan over medium-high heat. Heat a glug of olive oil, then fry the Denny Plant Based Patties for 2-3 minutes per side to caramelise the exterior and cook through. Remove from the heat and season.

To Serve 

Serve the flatbreads on a platter with the Denny Plant Based Patties and all the accompaniments. 

To assemble, add a dollop of curry mayo to a flatbread followed by a burger patty. Top with tomato sambal, cucumber ribbons, grated carrot and fresh coriander. Add a dollop of raita to finish and tuck in.
