Ingredients
1 Tbsp (15 ml) vodka
25 ml passion fruit purée
50 ml Brut sparkling wine
1 Tbsp (15 ml) Chambord
To Serve
crushed ice
a straw
Method
Pour the passion fruit and raspberry purées into a champagne flute. Add the vodka and stir the ingredients to combine. Add 2 spoons of crushed ice to the glass and pour in the sparkling wine. Add a tablespoon of Chambord to the top of the cocktail, add a straw and serve.
Bartenders Note: Chambord is a liqueur inspired by King Louis XIV’s visit to Château de Chambord in the 17th century. It is flavoured with red and black raspberries, vanilla and cognac.
