This very pretty in pink, Pinkberry smoothie, is made with antioxidant rich berries, coconut milk, potassium enriched banana. This is seriously yummy and so satisfying!

2 ½ bananas – frozen

1 C (250 ml) coconut milk

1 – 1  ½ tsp (5-7.5 ml ) peanut butter (or nut butter alternative)

¼ tsp (1.25 ml) cinnamon

¾ C  frozen red currants

5 large strawberries

1 Tbsp (15 ml) desiccated coconut

1 tsp (5 ml) vanilla extract

1 tsp (5 ml)  xylitol

Garnish

1 Tbsp (5ml) red currants

1 kiwi sliced

1 tsp (5 ml) desiccated coconut

1 strawberry

 

Place the frozen bananas, red currants strawberries, and coconut milk into blender/food processor and blend for 1 minute until all of the ingredients are well combined to form a thick smoothie base.

Add the peanut/nut butter, cinnamon, xylitol, desiccated coconut and vanilla extract to smoothie base and blend further for 30 seconds until all ingredients are well combined.

Pour the smoothie into a glass.

Slice a strawberry through the middle, making sure not to cut all the way through to the top. Place on the side of your glass jar. Sprinkle with red currants, desiccated coconut and enjoy!
