Peanut Butter Brownie & Pretzel S’mores Skillet

Ingredients
Peanut Butter Brownies
200 g smooth peanut butter
280 g sugar
3 eggs
100 g cake flour
30 g cocoa powder
1 tsp (5 ml) baking powder
½ tsp (2,5 ml) salt
To Assemble
peanut butter brownies, broken into pieces
100 g smooth peanut butter
100 g dark chocolate, broken into pieces
50 g mini marshmallow
1 C (250 ml) thick cream, to serve
Method
Peanut Butter Brownies
Preheat the oven to 180 ºC.
Line a 20 cm square baking tray with baking paper.
Melt the chocolate and peanut butter together. Add the sugar and stir through, then add the eggs, mixing well. Sift the flour, cocoa powder, baking powder and salt together. Add the dry ingredients to the wet ingredients and mix well to fully combine.
Pour the batter into the lined baking tray and bake for 20 min, the middle should be just set, be careful not to overbake.
To Assemble
Break the brownies into pieces, then add to a fireproof cast iron pan/skillet. Scatter pretzels, pieces of chocolate and marshmallows over the top, and add dollops of peanut butter in between.
Cover with foil and place on a grid over the fire until the chocolate and marshmallows are melted. If you have a kitchen blowtorch, you can brulée the top of the marshmallows for colour. Remove from heat and serve with dollops of fresh thick cream on top.
