Pea, Mint and Goat’s Feta Fritters

Ingredients
1 cup (250 ml) cake flour
1 tsp (5 ml) baking powder
Zest of ½ lemon
2 eggs
½ cup (125 ml) milk
Few mint leaves
2 tsp (10 ml) finely chopped chives
1½ cups (375 ml) frozen baby peas, defrosted
60 g goat’s feta cheese
Salt and freshly ground pepper
Vegetable oil for deep-frying
Lemon wedges and sweet chilli tomato chutney for serving
Method
Place the flour, baking powder and lemon zest into a bowl and mix lightly to combine.
Whisk the eggs and milk together and pour into the dry ingredients, mixing well until a smooth batter is formed. Stir in the mint, chives, peas and feta and season with salt and pepper.
Heat the oil until hot and fry spoonfuls of batter for a few seconds or until the fritters have puffed and are golden brown. Remove from the hot oil and allow to drain on some absorbent paper.
Serve warm with lemon wedges and a sweet chilli tomato chutney.
