
Pea, Mint and Feta Fritters
A delightful combination of ingredients all in one fritter of fun!

Ingredients
4 C (about 750 g) frozen baby peas, thawed in hot water and drained
1 bunch spring onions, thinly sliced
zest of 1 lemon
200 g feta cheese, crumbled
½ C (125 ml) finely chopped mint leaves
1½ C (375 ml) self-raising flour
4 large eggs
½ C (125 ml) milk
salt and pepper to taste
sunflower oil, for frying
sweet-chilli sauce, tomato and chilli chutney or jam, for serving
Method
In a large bowl, mix all the ingredients, except the oil and sweet-chilli sauce, together until well combined. Allow to stand for 15 minutes before frying.
Use a non-stick frying pan and heat 1 tsp (5 ml) oil over moderate heat. Place heaped tablespoons of the fritter mixture into the pan, flatten them out slightly and fry until golden brown on each side, about 30 seconds per side. Keep the heat moderate to prevent burning and add a little oil before frying each batch.
Cover the cooked fritters with foil to keep them warm or serve at room temperature. Serve with your choice of condiments.
Variations
Serve with cream cheese, sliced cucumber and a few slices of smoked salmon or with tzatziki.
