Pasteli Greek Energy Bars
Tuck into these deliciously more-ish energy bars to keep you going throughout the day.

Ingredients
1 2⁄5 C (350 g) honey
1⁄3 C (50 g) raw sunflower seeds
1⁄3 C (50 g) raw pistachios, roughly chopped
1⁄3 C (50 g) raw almonds, roughly chopped
1⁄4 tsp salt
Method
Line a baking pan (25 cm x15 cm) with baking paper making sure that you cover both the bottom and the sides of the pan.
Warm the honey in a small saucepan over gentle heat until it reaches a pourable consistency.
Combine the sesame seeds, sunflower seeds and nuts in a large saucepan and toast over moderate heat for 3-4 minutes.
Pour the warm honey over the seeds, add the salt and mix thoroughly.
Cook the mixture, without stirring, over moderate heat, until the honey turns golden brown and has been completely absorbed (about 10 minutes).
Pour into the lined pan and smooth the top with a spoon. Cool completely at room temperature.
Once cooled, cut into individual bars.
Store in an airtight container, making sure each layer is separated by a sheet of baking paper (this prevents sticking).
