Parmesan and Poppy Seed Biscuits
These savoury biscuits are very easy to make and can be served with a fruit preserve or just as is.

Ingredients
210 g flour
a pinch of salt
1 tsp (5 ml) freshly ground pepper
165 g butter, cold
165 g Parmesan cheese, grated
50 g cheddar, grated
1 egg white, lightly whisked
Method
Preheat the oven to 180 ºC.
Combine the flour, baking powder, salt and pepper in a bowl.
In a separate bowl, mix the butter, Parmesan and cheddar.
Add the dry ingredients and mix with your hands until the mixture forms a dough. Quickly knead into a firm dough that holds together.
Put the dough onto a well-floured surface, divide into two and roll into two logs. Brush each log with egg white and roll in poppy seeds to coat.
Wrap the logs in clingwrap and put into the freezer for 30 minutes. Once the dough is firm (but not frozen), remove from the freezer and slice into disks about ½ cm thick.
Put the biscuits on a baking tray lined with baking paper and bake for approximately 15 minutes or until golden.
