
Vanilla and Coconut Chai Tea

Ingredients
3 Rooibos tea bags
1 Tbsp (15 ml) of chai mix
1 tin full cream coconut milk
Optional: agave or coconut sugar to sweeten
Chai Spice Mix
2 Tbsp (30 ml) ginger powder
2 Tbsp (30 ml) ground cardamom
2 Tbsp (30 ml) ground cinnamon
1 tsp (5 ml) ground black pepper
1 tsp (5 ml) ground clove
seeds of ½ vanilla pod*
Method
To make the chai powder, mix all the spices together to combine. If need be, crush in a pestle and mortar to ensure you have a fine powder.
Store in an airtight container for future use. *If you don’t have vanilla pod, substitute with a teaspoon of pure vanilla extract, added to the milk mixture when heating.
Place a small pot over a medium heat, add the water and 3 teabags and allow to steep until it reaches deep golden colour. Remove the bags.
Add the coconut milk and chai mix and allow to heat until hot all the way through. Sweeten with agave or coconut sugar if desired.
Pour into serving glasses and sprinkle with a dash of cinnamon.
