Ostrich Steak Wraps
A slightly posh wrap. Oh so good, dressed with truffle mayo & parmesan shavings.

4 ostrich steaks (about 110 g each)
a pinch of dried thyme
smoked Maldon salt and freshly milled black pepper
¼ C (60 ml) good quality creamy mayonnaise
1 Tbsp (15 ml) truffle-infused oil, or more to taste
4 large wraps
100 g fresh rocket
200 g baby Rosa tomatoes, halved
1 small red onion, thinly sliced
½ C (125 ml) Parmesan shavings
Heat a griddle pan until smoking hot. Rub the steaks with the olive oil, thyme and seasoning.
Depending on their thickness, grill each steak for about 4 minutes a side for medium-rare. Remove from the pan and set aside to rest for 5 minutes before slicing thinly.
Combine the mayonnaise and truffle oil.
Spread a tablespoon of the mayonnaise mix onto each wrap.
Top with the steak, rocket, tomatoes, onion and Parmesan shavings.
Roll into secure wraps and enjoy!
• For an even more decadent wrap, spread evenly onto wraps together with the mayo.
