Orange Hot Cross Buns with Cranberries

350 g butter
1 C (250 ml) milk
2x 10 g sachets dry yeast
100 g sugar
2 tsp (10 ml) salt
1 tsp (5 ml) ground cinnamon
1/2 tsp (2.5 ml) ground nutmeg
4 large eggs, beaten
750 g cake flour
1 C (250 ml) cranberries
zest of 1 orange
For the cross mixture
1/2 C (125 ml) flour
juice of 1 orange (approximately 3 tbsp)
1/2 C (125 ml) castor sugar
juice of 1 orange
Heat the milk in a microwave oven and pour into a bowl.
Add the yeast, sugar, salt, melted butter, spices and eggs.
Add the flour, one cup at a time until the mixture forms a sticky dough. Add the cranberries and orange zest and knead the dough for 7-10 minutes until the cranberries are incorporated and the dough is smooth.
Place in a greased bowl and cover with a damp cloth.
Allow to rise for 1 hour.
Pre-heat the oven to 180°c and line a 30cmx20cm cake pan with baking paper.
Divide the risen dough into 8-12 even-sized buns and place in the cake pan.
Mix together the flour and orange juice and place into a Ziploc bag (or a small piping bag). Snip off the tip and pipe a cross onto each bun.
Place in the pre-heated oven and bake for 30-35 minutes.
In the meantime, heat the caster sugar and orange juice for the glaze in a small saucepan until the sugar has dissolved.
As soon as the hot cross buns come out of the oven, brush the glaze generously all over them and allow to cool slightly before serving.
