Orange and Coriander Infused Carrot Soup


A divine carrot soup with tasteful infusions!

  • 1 Tbsp (15 ml) olive oil
  • 1 Tbsp (15 ml) butter
  • 1 large onion, chopped
  • 500 g carrots, peeled and sliced
  • 1 potato, peeled and cubed
  • about 700 ml vegetable or chicken stock
  • juice and zest of 2 oranges
  • a handful of fresh coriander, chopped
  • freshly milled salt and pepper

Heat the oil and butter in a medium pot and sauté the onion until soft and glossy. Add the carrots and the potatoes and sauté for 1–2 minutes. Pour in the stock and the orange juice, cover with a lid and allow to simmer for about 30 minutes or until the carrots are soft. Remove from heat and add the zest and the coriander and purée with a hand-held blender until smooth. Add more orange juice if the soup is too thick. Season with salt and pepper.

Garnish with some coriander and serve with fresh seed bread.
