
Nutty Chocolate and Orange Pots
This is a great dessert for banting dieters and should be enjoyed only on special occasions and in small portions.

Ingredients
100 g blanched almonds
100 g raw cashews
60 g coconut oil, melted
1 ¼ C (310 ml) full cream milk
2 Tbsp (30 ml) cocoa powder
zest of 2 oranges
few drops of liquid Stevia*
cocoa for dusting
Method
Combine the almonds and cashews in a bowl and cover with water. Allow to soak for 2 ½ hours and then strain. Place the nuts, coconut oil, milk and cocoa in a food processor and process for a minute or so until smooth. Stir in the orange zest and then sweeten the mixture with a few drops of the liquid Stevia. *Add little at a time as it packs quite a punch.
Pour the mixture into 8 small glasses and set in the fridge for at least six hours. Add a dusting of cocoa just before serving.
Foodie Fact: Stevia is a natural sweetener which is derived from the plant Stevia Rebaudiana. Great because it provides an alternative to sugar without the calories.
