1 small cucumber, cubed
¼ cup (60 ml) Japanese rice wine vinegar or flavoured vinegar like Spanish red wine vinegar
4 nectarines
8 slices proscuitto
smoked sea salt and black pepper
micro herbs to garnish

Marinate the cucumber in the vinegar for 10 minutes.

Cut the nectarines into slices. Thread layers of nectarines, prosciutto and cucumber onto skewers. Season with salt and black pepper, and garnish with micro herbs.
