Nachos with Bean & Mango Salsa & Fried Chorizo


A simple, ‘throw together’ mezze-style snack packed with flavour. Tuck in.

1 x 400 g tin red kidney beans, rinsed and drained well
1 small red onion, finely sliced
1 medium ripe mango, peeled and diced
2 ripe tomatoes, chopped
2-3 jalapenos, seeds removed and chopped
a handful of fresh coriander, chopped
zest and juice of 1 lime
3 Tbsp (45 ml) red wine vinegar

To Serve
250 g spicy chorizo, sliced and fried until almost crispy
1 C (250 ml) guacamole
1 C (250 ml) sour cream
a large packet of nachos


Prepare all the salsa ingredients and then combine, cover and chill until ready to use.

The flavours will develop the longer the salsa has to chill in the fridge. Make at least an hour before serving, if possible.

Serve with slices of fried chorizo, fresh guacamole, sour cream and nachos.
