Mussels in Creamy White Wine Sauce with Garlic Bruschetta

A beautiful seafood dish with white wine sauce. It doesn't get much better!

1 Tbsp (15 ml) olive oil

1 Tbsp (15 ml) butter

1 small onion, finely chopped

½ C (125 ml) dry white wine

½ c (125 ml) double cream

2 cloves garlic, crushed

500 g fresh mussels, washed (discard any open ones)

handful of Italian parsley, roughly chopped

freshly ground salt and pepper

In a large pan, heat the oil and butter until bubbling. Add the onion and sauté until soft and golden.

Add the wine and cream. Bring to the boil and simmer for about 3 minutes.

Add the garlic and mussels, cover with a lid and leave the mussels to steam in the sauce for about 3 minutes. The mussels are cooked when they open up; discard any that are still closed.

Toss in the parsley and season with salt and pepper. Serve with the crispy garlic bruschetta.
