Mushroom Stroganoff on Bruschetta


A mushroom stroganoff like no other, paired perfectly with bruschetta!

  • 2 cloves garlic, crushed
  • 4 spring onions, chopped
  • 1 Tbsp (15 ml) olive oil
  • 250 g mixed mushrooms, cut into chunks or quartered
  • 1 tub (250 g) sour cream or crème fraîche
  • ½  tsp (2.5 ml) paprika
  • freshly milled salt and pepper to taste


  • 1 medium baguette, sliced on the diagonal
  • olive oil for drizzling
  • wild rocket for serving


Sauté the garlic and onion in the oil until soft and aromatic. Add the mushrooms and sauté until nicely browned. Stir in the sour cream and paprika. Reduce the heat and simmer for about 5 minutes. Season with salt and pepper.



Place the baguette slices onto a baking tray and drizzle with the olive oil. Place under the grill until nutty brown and crispy.

Spoon the stroganoff onto the bruschetta and top with rocket.


Serve the stroganoff with pasta or rice.

Add some ham or fried bacon to the stroganoff.
