Mixed herbs and olives fussili
A delicious mix of pasta, olives and herbs, for the perfect quick and easy dinner!

1 Cook the pasta in plenty of salted boiling water until al dente and drain reserving 60ml (¼ cup) of the water.
2 While the pasta is cooking, melt the butter and oil in a large frying pan and sauté the garlic over medium heat for a few minutes.
3 Sprinkle the herbs and olives over the butter mixture and stir to combine. Cook for a minute more. Add the tomatoes and season. Simmer for 20 minutes.
4 Pour the pasta into a serving dish and toss through the sauce adding the reserved water only if it is necessary. Top with the Parmesan and serve while still hot.
