Mixed herbs and olives fussili

A delicious mix of pasta, olives and herbs, for the perfect quick and easy dinner!

  • 450g fussili pasta
  • 45ml (3 tbsp) butter
  • 30ml (2 tbsp) olive oil
  • 2 garlic cloves, finely chopped
  • 60ml (¼ cup) mixed fresh herbs, oregano, rosemary and thyme, finely chopped
  • 200g black olives, pitted and chopped
  • 600g fresh tomatoes, seeded and chopped
  • salt and freshly ground black pepper, to taste
  • Parmesan, freshly grated, to serve

1 Cook the pasta in plenty of salted boiling water until al dente and drain reserving 60ml (¼ cup) of the water.

2 While the pasta is cooking, melt the butter and oil in a large frying pan and sauté the garlic over medium heat for a few minutes.

3 Sprinkle the herbs and olives over the butter mixture and stir to combine. Cook for a minute more. Add the tomatoes and season. Simmer for 20 minutes.

4 Pour the pasta into a serving dish and toss through the sauce adding the reserved water only if it is necessary. Top with the Parmesan and serve while still hot.
