Mediterranean-style Chicken Tray Bake

  • 2 red onions, cut into wedges
  • 6 cloves garlic
  • 250 g rosa tomatoes
  • 1 lemon, cut into thin wedges
  • 8 free-range chicken portions (thighs and legs)
  • juice and zest of 1 lemon
  • olive oil
  • salt and freshly milled black pepper
  • 1 C (250 ml) couscous
  • 1 packet (200 g) Calamata olives, drained and pitted

Preheat the oven to 190 °C.

Place the onions, garlic, tomatoes, lemon wedges and chicken in a greased baking tray.

Add the lemon juice and zest. Drizzle with olive oil and season with salt and pepper. Bake for 45 minutes.

Meanwhile, prepare the couscous by adding 1 C (250 ml) cold water. When all the water has absorbed into the couscous, loosen with a fork and season.

Remove the tray from the oven and toss in the couscous and olives. Bake for a further 10 minutes.
